
An Edinburgh restaurant is set to host a one night only fried chicken collaboration with a twist.
Ardfern, which opened opened in 2024 by Roberta Hall-McCarron and Shaun McCarron, and has already earned a Michelin Bib Gourmand (2025) and widespread praise for its modern, relaxed approach to Scottish cooking, will team up with Birds Fried Chicken.
The Rare Birds series has already taken Glasgow by storm but this will be their first venture into the capital, bringing together two widely regarded kitchens. The night will look to ‘blur the lines’ between everyday and fine dining.
Diners will be seated in Ardfern’s coastal-inspired dining room, with the takeover seeing Birds’ co-founders, Nick Watkins and Peter McKenna and the Ardfern team serve an elevated, creative menu that bridges casual indulgence and culinary finesse – ‘a signature of the Rare Birds ethos.’
Nick Watkins, co-founder of Birds, said: “Rare Birds is all about collaboration, curiosity and doing something unexpected. Working with Roberta and the Ardfern team is a huge moment for us. Their approach to flavour and ingredients is incredible, and it’s the perfect fit for what we’re building with this new event series.”
